In recent years I've grown pretty fond of salads. (I'm a recovering picky eater..:-D ) There are two salad recipes I'm looking for. One is called seven layer salad. It looks pretty in a trifle bowl. And the other one is a chicken salad recipe that uses apples. One day I'll learn to ask for recipes of dishes I like.

I've got a real good seven layer salad recipe. Give me a minute and I'll post it for you.
Layered Salad
Lettuce
Celery, chopped
Onions, chopped or sliced into thin rings
English peas, frozen (DO NOT THAW)
Cauliflower
Green Peppers, chopped
Radishes, thinly sliced
Bacon bits
Grated cheddar cheese
Layer the above ingredients.
Dressing: 1 cup may and 1/2 cup sugar. Spread on top of salad.
Sprinkle parmesan cheese on top of dressing.
This is from my mother-in-law. Sorry I don't have measurements. Just use however much you like. Omit any of the layers that you don't like and feel free to add other ingredients.

If I have leftover baked chicken I like to use if in chicken salad. I do prefer it baked but I usually just boil it.
You can add or subtact any ingredients listed below, but this is how I like to make mine:
Chicken - (I use my mini chopper for my chicken)
Chopped celery
Chopped onions
sweet relish
chopped red apples (with the skin on)
I've eaten it before with grapes and pecans in it too (minus the apples if you use the grapes) but I've never fixed that way
Mix with Mayo and salt and pepper to taste.
Sorry I don't have measurements - I just look at how much chicken is in the bowl and then start thowing the other stuff in with it.
The mayo depends on how creamy you like it. Start out with 2 tablespoons - you can always add more.
That sounds real good, citygirl. I just happen to have leftover chicken...think I'll try it! :-D

Thanks citygirl and jmb..they both sound really yummy! I'm not a big fan of chicken salad but it was really good with apples so really looking forward to this one.

Lettuce (your favorite type)
Sliced Fresh Mushrooms
Boiled Egg whites (cubed or chopped)
Either bacon bits or diced ham (not too much)
Shredded cheese (just a little bit)
Croutons (Big fat ones, several)
1000 Island dressing
...... Ummmmmmmmm

I don't like most restaurant salads anymore. They all want to get fancy with weird lettuces, spinach leaves, and what looks like tree leaves. Just give me a damn salad with Iceberg lettuce and whatever else you want to throw in there, but keep those weird leaves outta there! I'm not a fricken Koala Bear.
And is it Crescent City Grill that has those nasty greasy croutons? Maybe not, but there's some supposedly "fancy" restaurant that does. I think it's them, though. Gross. They taste like a dirty big toe. :smt078

I don't have a recipe to post right now, but I love WCW's chicken salad. I wish I knew how they made theirs. Does anyone have a recipe that is similar to WCW's?
Also a good tip if you need chicken. Sam's has rotisserie(sp?) chickens for $4.88. And they are really good. Very moist and actually seasoned. You can hardly find a chicken in the store for under $4 plus when you add in the time it takes to thaw it, and cook it. The Sam's comes out cheaper. I highly recommed you all try it.

1/4 head of iceburg lettuce
salt
pepper
parmasian cheese
....

Okay, here's my recipe for the perfect salad:
(Borrowing from Joe's)
1/4 head of Iceberg lettuce, torn into 1" squares, not shredded or cut
1 whole tomato, peeled & diced
1/4 large red onion, diced
1/2 bell pepper, diced
4 hard boiled eggs, sliced 1/8" thick
a double handful of raw mushrooms, sliced thin
a handful of little bitty sprigs of raw broccoli, no stems!
1 pound of crumbled bacon bits - crispy!
2 or 3 different kinds of cheese, whatever you want, crumbled
some non-greasy croutons, enough to cover the top
1 quart of bleu cheese dressing, soaking everything
and throw a 16 oz. ribeye steak on top for good measure, medium rare

My favorite salad recipe:
bag of rotini noodles
small jar of artichoke hearts in oil, chopped
can of large black olives, drained
container of crumbled sundried tomato feta cheese
container of grape tomatos
Cook noodles and then combine all ingredients, tossing to make sure everything is coated with the oil from the artichoke hearts. It's better in my mind if it's served slightly warm. You can add chopped chicken breast to it if you want. I like it without, served with some crusty french bread.
My second favorite salad recipe:
Some spring greens
handful of walnuts
crumbled gorgonzola cheese
sliced strawberries or handful of raspberries or some mandarin orange segments
raspberry walnut vinagrette dressing
My third favorite salad recipe:
Bag of fresh spinach
Bacon, crumbled
Vinegar (prefer balsamic)
Soy sauce
little sugar
Cook the bacon, reserve most of the bacon grease. Add vinegar to the bacon grease along with the sugar and soy sauce. Allow to reduce until dark and rich. Poor dressing over spinach and bacon.

All of this talk about toes.. on a salad topic... can I just say, EEEEWWWW! I have a great pasta salad recipe if you're interested. It's not really fattening either. Great to make up a batch and take it for lunch all week.
1 lb of macaroni pasta
2 tomatoes (de-seeded)
2 cucumbers (peeled and de-seeded)
2 pkgs of scallions
Miracle Whip
1. Boil your pasta as directed while dicing the cucumbers and the tomatoes.
2. Dice the scallions (You will only want to use the white parts on the end, if you use all of it, its too oniony)
3. Drain pasta and mix with the veggies. Stir in the Miracle Whip (use just enough to make the mixture moist)
4. It also good if you add a couple of cans of drained black olives, just gives it a little kick.
Like I said, it's great to mix up a batch and take it for lunches at work. Also can be used as a side dish with whatever.

I love chicken salad and found a recipe in Cooking Light for a different twist on chicken salad. It was very good and I got tons of compliments when I made it. And it's super easy. Sounds kind of weird, but trust me, it's delish.
Diced chicken
nectarines diced small
cucumber diced small
purple onion chopped small
toasted pecan pieces
toss with a little lemon juice and some store bought Balsamic vinaigrette(you can make the mint vinaigrette but who has the time?)

I'm usually not big on pasta salads either, but this is different. The Miracle Whip has paprika in it and it gives it a kick, rather than just regular, bland fattening mayo..:)

Yeah, I agree, for the most part. The pasta salad is the ONLY thing I use it for. I don't really like it otherwise. It's too weird a taste, but in the pasta salad... it just gives it something extra.:smt102
