So...ummmmm...apparently my uncle shot a deer yesterday. And a wild pig. (My dear...heh...uncle lives in Texas and did this in his backyard) For Thanksgiving, he's bringing me a bunch of vension and some wild pig meat. The good part is that I get the Sner's share as well because she doesn't want to deal with a cooler for a three day drive.
Now, I'll try just about anything just about once. I cannot recall ever having venison before. I'm sure I did when I was a kid, and I have some vague recollection of deer sausage. I do know that the time I tried pheasant, I didn't like it. At all.
Any recipes to help a poor fuzz out? :smt100
Any and all suggestions would be appreciated.

Deer tends to be a little dry because they aren't fattened up like beef. The meat is very lean, which is good, but remember to add some beef or pork fat when you cook it or you can dry it out real quick. Al Cascio's can make excellent deer sausage out of it ( they add some pork to the mix to keep it tender), but save the back strap for the grill.
If you have a whole hind-quarter, take it to Roses Quick stop and have it smoked. If you have some backstrap, slice it kindof thin and beat it with a meat hammer, then dip it in yellow mustard, then egg wash , then seasoned flour and fry it. yummy.

Thanks. I have no idea what's coming...have just been told that it's coming. Kinda apprehensive about the whole thing, as the Sner was not enthused at all.

I'm not a big deer burger fan, in fact i'm not much of a venison fan at all. With that being said, I've found venison fajitas very tasty. I take tenderized venison steak and marinate it 24 hours in a fajita marinade add a little lime or lemon juice and a shot of tequila, peppers of your choice and some onion. Grill the meat and saute the peppers and onions. Add toppings of your choice and it's done.

I can't help you with the recipe, but you'll love the venison. YUM!! I think that'll be one cool Thanksgiving. I think you have to marinate it in something ascidic, like coca cola to tenderize it and draw out some of the wild flavor. Remember it has almost no fat, so it'll be tough unless you marinate it. Cook it slowly over time. I'd Google Venison Recipes, fuzzis. Now, if you want a wild pig recipe, I'll get you that. One of my friends from HS is a guide in Texas. He takes people out wild pig hunting. Bet he has recipes for Venison too. I'll get back to you on it.

Beer makes a good deer marinade base.
Also, rubbing it down with olive oil helps prevent dryness.
Cook it SLOW.
