Ok all of you innovative MyHattiesburg people,
So I'm married to this wonderful man who has spoiled me. He does all of the cooking and has since we were married 6 years ago, because - #1, I suck at cooking, and #2, he loves to cook!
I'd love to cook a nice meal for my sweetie tomorrow night, but I need some ideas! Please, nothing elaborate where I have to go to the store, because I'm still cooped up in the house recovering from this bronchitis.
Any ideas on something I can make which involves ingredients most people already have in the house? I know we have ground beef & boneless skinless chicken breasts. If I don't have step by step instructions, I can't do it.
Pitiful huh? :confused:
We can also use this thread for recipes later on.

Brown the chicken breasts in a skillet, add the mushroom soup, cook until the chicken is done. Cook some rice in another pan. Serve the chicken & sauce over the rice. Or you can put the rice, the soup plus a can of water and the chicken in a baking dish, cover and bake about 35-45 min at 350.

If you got a can of Tony Chachere's in the cabinet, give the chicken a generous "dash" of it while it browns. It will bring taste to old inner tubes!
You'll do fine. Relax and wear something that will get his attention!
Any time you get a chance at one of Hawkeye's recipes, don't pass it up!

ya'll are making me want to eat somethin.......
I corrected a typo in the recipe. I originally typed 1-2 cups of sweet peppers, when I meant 1/2 cup. My remote keyboard is going south. I changed the batteries and blew it out with canned air but I think the cheap POS is on its last leg.
Thanks...made the change. If we don't go out of town this weekend, we're having Chicken Hawkeye! :p

Hawk, that really sounds good. I wonder if you could use heavy cream or half & half if you didn't have cream cheese?
You know, I think I'm out of Tony C's for the first time in a decade. How did that happen? I barely cook any more.
So, Seller, how did dinner turn out??

I like this website from Kraft Foods (http://www.kraftfoods.com/kf/). It has a feature where you type in an ingredient that you have on hand and it gives you several recipies containing that particular ingredient.

Light charcoal on grill.
Let charcoal get hot.
Throw meat on grill.
Flip.
Take meat off grill.
Serve.

Heres a simple chicken dish for ya:
Cut chicken breast in chunks, sprinkle with Tony's and brown in large non-stick skillet with a Tbs of butter.
Also, go ahead and get a big pot of water going for pasta (I like bowtie). By the time the pasta is ready, you can have the sauce, below, finished.
To browned chicken, add 1 cup of chicken broth, and 1-2 cup of brocolli florets, and 1/2 cup of green or red sweet pepper chopped, 1/4 cup chopped sweet onion. Season with 1/2 tsp of garlic salt and 1/4 tsp red cayanne pepper. Cover and cook about 5 minutes until broccoli is tender.
Open a 3oz package of cream cheese, place on micro safe plate and microwave cream cheese about 40-45 seconds.
Take skillet off heat and add softened cream cheese and fold in pasta. That's it!
Or, you can spoon the sauce over the pasta if you prefer. If sauce is too thick for your liking, you can slowly add a little milk/cream, or more broth.
This dish takes no more than 30 minutes from start to finish. I made it today and was good. Sometimes I substitute fresh shrimp for chicken and season with Old Bay seasoning.

Thanks to everyone for the great recipes! I didn't make any of these tonight though. I ended up making the following instead, mainly because of the name of it "Quick, Easy -n- Fast! haha!
Quick, Easy -N- Fast South-of-the-Border Chicken Skillet Recipe
4 small, skinless, boneless chicken breast halves
2 tsp. cooking oil
1/3 C. sliced green onions
1 clove garlic, minced
1 Tbsp. chili powder
1/8 tsp. ground cumin
1/8 tsp. pepper
1 - 14 1/2 oz. can tomatoes, cut up, undrained
1 & 1/4 Cups chicken broth
3/4 Cup long-grain rice
1/4 Cup picante sauce or salsa
sour cream
In a large skillet, quickly brown chicken breast halves in hot cooking oil over medium-high heat, turning once. Remove chicken from skillet. Add green onions, garlic, chili powder, cumin, and pepper to skillet. Cook and stir for 1 minute.
Remove skillet from heat. Carefully stir undrained tomatoes, chicken broth, and long-grain rice into vegetables in skillet. Return skillet to heat and bring to boiling. Arrange chicken breast halves on top of rice mixture. Reduce heat. Cover and simmer for 15 to 20 minutes or until rice is tender and liquid is absorbed.
Spoon picante sauce or salsa over chicken. Cover and heat for 1 minute more. Serve with sour cream.
Makes 4 servings.
It turned out very well. I added shredded cheese on top at the very end and let it melt before serving. Hubby said it was very good! :smt038

He was here while I was cooking and buried in his homework, so I don't think so. He was very thankful though, because he was exhausted after being in class all day. He's in a Crime Scene Investigative course at USM all this week, every day from 8-5, so the sitting in class all day is wearin' him out. :neutral: I was glad I cooked.

LoneStarGirl, it's a famous creole seasoning (http://www.tonychachere.com/). My hubby uses it ALL the time, and it's wonderful!
