Me too. I can't be too bossy since he catches them, cleans them, and cooks them. I consider myself truly blessed. :) He makes up a delicious stuffing that includes crab meat, shrimp, bell peppers, onions, etc.; then he stuffs them with it and tops them with cheddar cheese and bakes it. YUM!

Riien is quite the chef also! He is more into Italian foods though!!! :)

My dad can make some great dishes with fish! I don't eat a lot of different foods, but seafood I'm pretty open to!

So far I haven't turned away anything my hubby cooked, and if you see me, you can tell. He's an excellent chef. Tonight we had pork chops battered in wheat flour and fried in peanut oil. He made some red beans and rice to go with it. (He loves rice. LOL) They were the best pork chops he's ever made.

Awesome! With Riien being gone, it's cereal tonight! lol I usually do smartones for dinner (love the turkey) and peanut butter/jelly for lunch...how sad! :) He said he'll teach me to cook! :)

There is nothing better then stuffed flounder. I got the stuffing recipe from a friend of mine and it is delicious. I usually smell like garlic for a couple of days afterward.

Well, had a pretty good night. Got down to Gulfport Harbor around 12:30 A.M. and drove down Hwy 90 to my floundering spot for the night. A little wind blowing but not to hard. Anyway....ended up with 6 very nice flounder. I saw around 6 -8 more, but for some reason they didn't want to hang around very long. Before I could even get close they were gone. Would have been nice to have those along with the 6 I ended up with, but I'm not complaining. Six flounder yields alot of meat and I have walked all night and only seen 1 or 2. That makes for a long ride home and the wife isn't to happy on those nights. Now I just have to stuff those babies with some crabmeat stuffing and prepare for a delicious meal!

I was wondering the same thing. My Mom and Dad used to go when we lived in Gulfport. She said you had to shuffle your feet so you don't get hit by a stingray.

Lantern--Is it a lantern or a flashlight? Is it reall dark out there and any mosquitos?

Well, I am glad you got flounder.

I would like the recipes of anyone for stuffing. Can you post them here, please?

I used to go by myself, but it gets hard making that hour drive by yourself when you're up all night. Also, a few years ago I had a dopehead confront me down there posing like he needed a ride. I took my flounder gig out and let him know that I wouldn't hesitate to use it for other purposes if he didn't go on his way. He got the idea. Just safer to have someone there with you. There usually aren't that many people out that late floundering. Now if you are out there around 10:00 or so there are more.

Gee, I don't blame you for taking someone to share the ride and for safety. Not to mention company and just helping to flouncder.

How deep do you have to go or out from shore?

Is there a certain time with the moon or anytime?

Is the flounder crop as big as after Katrina? ( full of?s today, aren't I?)

It's a modified lantern. What I mean by modified is that I take it apart and mount a stainless mixing bowl on it to act as a reflector with a handle on the back. Of course I've seen all sorts of contraptions used as floundering lights. You can shuffle your feet to avoid stingrays, but the only problem is you also spook the flounder when you do this. The thing about floundering is that you can see the stingrays. Just don't bother them and they won't bother you.:smt023 Now if I'm in water that is to deep to see the bottom then I definately shuffle my feet. Mosquitoes can be a problem if there's no wind.

Here's a really simple recipe for a crabmeat/shrimp stuffing:
1 box of stovetop stuffing
1 bell pepper
1 onion
1 teaspoon of minced garlic
green onion
crabmeat (imitation or canned)
small salad shrimp
sage
cayenne pepper

Saute the peppers and onions in a small amount of oil or butter. When finished mix everything up in the stuffing mix. I don't have measurements to give you on the spices, crabmeat or shrimp. I just do it according to my taste an how much seafood I want in it. After the stuffing is done I will stuff my fish with it and bake in the oven. After baking I put a special SECRET sauce on top.
Now this is a stuffing recipe that I use for stuffing fish. It taste great for this purpose. I don't know how it would be to just eat it on it's own. If you want to go all out you can make your own cornbread stuffing and not use the stuffing mix. I just use it because it's so much faster.

You did make the wife clean them, didn't you? After a hard night of floundering and gathering food for squaw, a man shouldn't have to clean the fish he worked so hard to capture.

You don't have to go far out from shore. You can walk out as far as you want as long as the bottom is visible. Full moon is bad for floundering. For some reason they are a bit shy during a full moon and you can't get close enough. The darker the sky the better it is. I like to flounder on an incoming tide, so I usually try to start at low tide. Katrina didn't hurt the flounder population.

ES, I was joking with my hubby, and he knew it.

And no, I don't clean fish. I'm too grossed out with cutting off fish heads and all of that. :smt118

Yeah, you gotta have somebody with you nowadays, especially since they've come out with the floating coolers and all. One guy can fish and pull the cooler for fish, the other can fish and pull the cooler of beer!
Glad you got some!

Yep, the wind has been bad this year. I guess all of that bad weather north of us has been pulling gulf moisture. That usually keeps the winds up. I was a little disappointed that I didn't get more flounder. Usually I get at least 8-10 when I go with a light and gig. Oh well.....next time I'm going to my secret spot.:)

I usually don't tell this story, but in the spirit of funny discussions.....here goes.

About 4 years ago I went to the beach to get me some flounder. I had just built my beautiful modified floundering light and couldn't wait to try it. When I got down there I fired up the old light and was pleased with the wonderful job I had done building it. I floundered for a little while and decided to move to another location. Upon arriving at my truck I turned the valve off and realized that for some reason it wouldn't shut off. The light would sit there and burn very slow. Had to be a manufacturer's flaw since I was now the expert on coleman lanterns and my modifications couldn't have caused this problem. Well, if you know anything about a lantern then you would know they work off of pressure. I couldn't drive down the beach with a lantern still burning inside my truck so I had the bright idea to open up the lid where the fuel goes and let off the pressure. The lantern was sitting inside my truck on the seat and I opened the cap slightly. Coleman fuel proceeded to erupt from the tank and immediately caught on fire. I grabbed the handle to get the lantern out of my truck. When I pulled it out the fuel poured out (since the cap was now open) and caught on fire as it poured on the ground. So there I was swinging this flaming lantern around with fire all around me at 2:00 in the morning on the side of Hwy 90. I looked llike I was attempting some sort of ritual with a big torch in hand:laugh:. When all was said and done I had burned off all the arm hair on one arm, hair was burned on my legs and my wonderful lantern was laying about 30 yards out on the beach where I had thrown it LOL!! My truck was also full of black smoke for about 10 minutes. Needless to say I have been very careful with lanterns since then. :-D
