Came across this (http://projects.washingtonpost.com/recipes/2007/06/20/zucchini-alla-scapece/) in my wanderings this morning. I think I might have to hunt up some zucchini and mint this weekend.

I heard that reading the Washington Post will make you go blind. Or do I have that confused with something else?

Garlic and zucchini...mmmmmmm. :)

I had the fried eggplant at The Dinner Bell (http://www.roadfood.com/Reviews/Overview.aspx?RefID=648) in McComb Saturday. Best eggplant I've ever had. My sister said a friend of hers at the lake makes one that tastes exactly like it and will send the recipe. I'll share it with you when I get it.

I love the Dinner Bell!! I've only been there a couple times with Pathfinder, but it's really good!! That was actually the first time I'd ever had eggplant, and I've loved it ever since.

This can't be correct. There's no meat in it. A recipe has to have meat in it, or at least bacon drippin's.
