Hello, my dad used to make chess pies and watermelon rind preserves. Yummy.
Anyone willing to share or tell me how to do it. Mom doesn't know how he did it. Wish I had written them down. I was a teenager .:(
Tried to find a forum or a sub-forum but this didn't fit anywhere. Wish there was a forum for Southern Life or such.:confused::confused:

Here's one:
1/2 cup butter or margarine, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
4 eggs
1/2 tsp salt
1 tsp grated lemon peel
1 tsp lemon juice
1 tsp vanilla
1 cup finely chopped walnuts
1 cup finely chopped raisins
1 (9-inch) unbaked pie shell
In medium bown, cream butter and brown and granulated sugars until fluffy. Beat in eggs, one at a time, until well blended. Stir in salt, lemon peel and juice, vanilla, walnuts and raisins. (Mixture will apppear slightly curdled.) Pour into unbaked pie shell. Bake, below oven center, in preheated 350 degree oven 40-45 minutes or until just barelu set in center. Top will be a deep brown. Cool on wire rack.
Serve with Walnut Cream Topping.
1 cup whipping cream
2 tbsp powdered sugar
1/2 cup finely chopped or ground walnuts
In medium bowl, beat cream until soft peaks form. Fold in powdered sugar and walnuts.
Make 8 servings.

Thanks to all ya'll. I remember Dad would get a hankering for chess pies and would make some plain ones and the lemon.
Why am I remembering Karo? Is that part of it?
I think he also gave some to neighbors as well.
I've got Mother's recipe for chess pie somewhere around the house. That's one food I never could learn to like.
