Hey everbody'! Back from vacation in Helen, GA. Small city with ALOT of traffic and friendly folks up there. You know, when I hear the word Georgia, I don't think of trout fishin', but let me tell you what, they got some of those little critters up there!

Let me start off by saying that the Manager of Unicoi Outfitters (http://www.unicoioutfitters.com/) gave me some great information and put me on the trout! Now me and my little partner didn't catch any wall hangers to say the least, but the action was non-stop for the 3 days we fished. Largest fish, Rainbow Trout was 12 in. long. Numbers? Well let's just say I lost count the second day after we released about 15 or so. Now the last day we fished was by far the best. On the 2nd, the Natural Resource division restocked the upper reaches of the Chatahoochee River. Oh man, did they ever re-stock it. We prolly caught 60 trout that morning, Rainbows and Browns.
I kept about 25 of these little critters over the days I fished to bring home with us. Not a lot of size to em', but talk about fun! The bait of choice.......Del Monte kernel corn! They would hit spinners and the like, but the corn...they just couldn't resist it when it came driftin' by.

I learned alot from fishin' up there and talkin' with the locals. The Chatahoochee River is a seasonal trout stream. They tell me that the best fishin' just ended and that April and May are the best bets. Seems the water gets to warm in latter July and August and those little trout just can't stand the heat in the lower reaches of the stream.

I have updated my gallery (http://www.myhattiesburg.com/gallery/thumbnails.php?album=74) for those that are interested. There are some nice pics of the Hoochee and my little partner. I don't know if he liked the fishin' or the wadin' better, but I do know we had alot of fun.

Till' next time,
Fish-Bait

Good job dude. We got some family in Blairsville, just north of Helen, the fishing is really good after they 'restock' the trout. Helen is cool during Octoberfest, plenty of beer and bratwurst. Glad you had fun, now when is the fish fry?

Fish-bait, I enjoyed reading your report. It sounds like you had a great time -- memories that your little partner won't ever forget!!
It was a great time. The weather was nice too us also. I am gonna try and get a pic up of the little bitty fella too.

That's a beautiful stream and mighty handy looking fishing buddy, FB. Glad ya'll had a nice trip and missed our recent monsoon season opener.

How good dem Rainbows taste and how you like to cook dem, best?
Well, the only homecooked ones I had were grilled. These I just gutted, removed the head and even left the scales on em'. One of the locals up there, "Bob" said this was the easiest way and you can just peel the skin back.
I figured a sheet of buttered aluminum foil, a wee bit of tony's and a nice warm charcoal fire with some pecan wood scattered around should do the trick. Them trout are bony though, let me tell you!

Prolly gonna grill some this evening. How many did you end up with up in Colorado, I didn't see a report. You might have mentioned it elsewhere though.

How do you cook those suckers? I had some rainbow trout one time and didn't know what to do with them so I fried them puppies up and everybody laughed at me cause they said you wasn't suppose to fry em. But they were good. Tasted a little fishy though and can't hold a candle to white perch/bream/ or bass.:smt118

I've have eatin' em' fried, grilled and baked. Grilled by far was the best though. My stepdad's childhood fishin' buddy Joe grilled up some that we caught on the Kern River just outside of Bakersfield, CA. He caught one that was around 5 pounds or so. He steaked it out cutting the pieces about an inch wide and we picked em' off the grill just as fast as they would cook. Haven't eaten any in a while. I have some to experiment with though.

The ones we kept were rainbows, caught them in Twin Lakes. We caught some browns but they were little. The water was freakin' cold, like 39 degrees. There was still snow in the tops and we weren't too far from them.
