Here are two breakfast casseroles we love! Kids really love this stuff. My grown up kids don't like raisins so I make it with plain white bread when they come.

French Toast Casserole

1 loaf cinnamon raisin bread or white bread.
8 eggs
2 cups milk
1 can pet milk
1/4 cup sugar
3/4 teaspoon salt
1 teaspoon vanilla
2 tablespoons margarine spread on the bread
1/2 teaspoon cinnamon

Grease 13x9" pan. Cut bread into 1" wide strips. Put one layer into bottom of pan.

Beat eggs, milk, sugar, salt and vanilla in a large bowl. Pour over bread. Sprinkle the top of the bread with cinnamon.

When ready to cook, place pan in COLD oven. Turn temperature to 350ºF and bake for 45-50 minutes. When touched, it should spring back.

Allow to set for 5 minutes before serving. Serve with syrup or fruit compotes.

Egg and Sausage Casserole

This is a very basic version of the breakfast casserole that are prepared the night before. You may add chopped onions, peppers and seasonings. Also, bacon could be substituted for the sausage. This works very well on a buffet since it does not need to be served piping hot.

1 pound bulk breakfast sausage (can use link sausage but removed the casing :)
6 cups fresh bread cubes (1/2 to 3/4-inch pieces)
6 eggs
2 cups milk
1 cup grated cheddar cheese
Salt and pepper

Grease a 9x13-inch baking dish. Heat a 10-inch skillet over medium-high heat. Add the sausage and cook until lightly browned and cooked through, breaking apart the large clumps as needed. Drain on paper towels and cool. In a large bowl, whisk the eggs. Add the milk, salt and pepper; whisk until well blended. Stir in the cooked sausage, cheese and bread cubes until well combined. Pour into the baking dish; cover and refrigerate overnight. To heat, preheat the oven to 350° F. Bake for 1 hour. Remove from oven and let set about 5 minutes before cutting.

I like syrup on mine!

Wow, eyescene, that second one is my Christmas morning breakfast casserole. It's great because of the overnight thing -- my family loves it.

Here's another Christmas morning favorite. Unroll a package of Crescent roll dough and pat it out into a rectangle. Crumble 1/2 lb raw breakfast sausage over it, and some grated cheese. Roll up longwise and slice into 1/2" slices -- you should have pinwheels. Bake about 20 min. Usually I do two of these at a time -- one with cheese and one where I spread mustard on the dough and then add the sausage. When my son & Baby Bro were younger, they inhaled these.

I love those b'fast casseroles....Do you have the capability to make them in bulk (i.e. enough to feed 50-60 people)? What price?

OMG, Stratton, I would have no idea. How to cook for that many. I'd have to buy pans too....anyways....I know who does. Jody's Bakery will make both of these or they use too! We got all kinds of Casserole from there when I worked in the medical feild.

Let me tell you, that meat and cheese will cost you a mint to feed 50-60 people.

Hey yall thanks for the kind remarks, I'm just :smt102 as I thought most already knew these. I been making them for years. Although it has been a while and getting about time!

Hey Hawk here is Paula Deens (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_26774,00.html) take on the French Toast Casserole She uses a topping.

Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

Glad you enjoyed it Hawk and Ms Elle. Yell it is more than enough for two...LOL, it is for feeding a family at least 5.

I don't eat either first thing in the morning. I still haven't eaten yet. Glass of tea first then it's coffee, coffee and more coffee! But I'm done now with the coffee and need to find something to eat cause I'm start to get the shakes.

Hawk, the recipe says to let it set overnight, and that's what I always do, but apparently it turned out ok without ? That's good to know!

ES asked about making it for a big crowd. It seems to me you could make up a big batch in several bowls -- one pan feeds six, so if you made it 10x the original recipe, that would feed 60. However, I would only bake it in the 10x13 pans, otherwise it might not get done in the center. What do you think?
And glad to know that I'm not the only old person who can't eat first thing in the morning anymore. That's a big change for me, a breakfast person.

I don't think ever waited over an hour to cook mine maybe two. Always it is Great! In fact thats what for supper tonight!

Now back to ES! Yeppers, got to have enough time and money! You do it Hawk! Heck it might be something good for future biz!
