View Full Version : Sweet Tea and Fried Catfish

We don't drink sweet drinks around here, so it's been years since I've made a pitcher of sweet tea. I have a bunch of relatives coming in a couple of weeks, and we're going to fry catfish and all that, and I know they drink lots of sweet tea. So how much sugar should I put in a pitcher of tea?

While I'm at it, anyone know a good place to get a deal on some catfish?

I use a little over a half cup of sugar per pitcher, but then again, I don't like it very sweet. My boss, who does like it sweet, is happy when I use 2/3s -3/4s cup of sugar.

If you aren't sure just go and buy a few gallons of Red Diamond. Take it home and pour it in the pitcher and discard said 1 gallon container. Then you ain't gotta worry bout' it.

McAllister's also sells tea by the gallon..they have the best tea in town. The Red Diamond isn't bad either...

It's Mississippi fish, right? I don't want any of that foreign crap.I've never asked, but their other seafood: blue crabs, ground mullet, flounders, etc. all seems to come from the coast, and I see them cleaning the fish right there behind the counter.

I eat both of those places on a fairly regular basis but I have made a discovery out in Moselle called the Catfish Grill.

I think that place is my fav now.

i dont know if its the old watermill or not...its a small place...almost like one of those catfish one joints in the regard that you order at the window...but its got a screen porch all the way around it for people to sit down and eat.

its on 11 in moselle...if you get off on the moselle exit go up to 11 and take a left...should be about a quarter to a half mile and youll see the place on the left...

im not thoroughly familiar with moselle though

Now, y'all got me thinkin' seafood. I'm gonna have to swing by Southern Seafood on the way home for a flounder. Broil 'im up with some butter & onions.

I can hook you up with a case of Mississippi Delta Pride Catfish, whole, or different size filets @ my cost if you give me your order on a Sunday and pick up on the following Tues afternoon. We order on Monday mornings and take delivery on Tuesdays. All are IQF (individually quick frozen).

I can PM you a price on the size filets we use in the restaurant (5-7oz) if interested, and it will be next Monday before I can quote prices on other sizes or cuts. The filet we use is the most expensive and desired size. Over-size filets and mis-cuts are cheaper. For a family fish fry, there ain't a damn thing wrong with mis-cuts. We have to use the sized filets for portion cost-control.

You can get the mis-cuts too?

We're gonna be dropping them into a giant pot of peanut oil. If they're frozen, the oil will fight back. I guess I could get them completely thawed between Tuesday and Saturday.

it doesnt take long at all

when i worked at lumberjacks back when i was like 17, thats what we did with the catfish..we took the individually frozen stuff and put it on a big sink full of water the night before and strained it before we started cooking the next day.

Mac, a neat trick I use when frying catfish is to coat the fish with mustard before you put them in the fish fry. This will help keep the fry on and gives it a very good flavor. Don't use a lot, just a light coating.

i still make tea the old fashioned way. 2 qt pot full of water, bring to a rolling boil, 5 heaping tablespoons of loose lipton tea. stir for 1 minute, remove from heat, cover and let steam for 15 minutes. add 1 1/2 cups of sugar into a 1 gallon container. pour through a tea strainer into the container and fill to brim with hot water. be sure to stir the sugar until it completely melts. it is really hard to find boxes of loose tea now days.

Kaint' you jus' cut them packits of packed up tea open with yer' buck nife? Seems to me that wen I runs outta skoal and hafta raid grannies kitchun I alwayz end up cuttin' inta' one them tea packits.

My daddy liked it with a cup of sugar and that always made my teeth hurt. When I go places like McAllister's, I go about half and half sweet and unsweet. Anything else tastes about like syrup to me. I like to be able to taste the sugar AND the tea. :-D
