my cousin's mother in law made this dish tonight. i wasn't sure what i was going to think about it because of my track record with spam, but it was great! matter of fact, i'll prolly cook it when i get home!

Ms. Wilda's Spam Stuff

1 can of spam
very thin layer of mustard
1/2 c. brown sugar
2 cups corn flakes, crushed
1 can sliced pineapple, drained
2 tbsp butter or margarine.

Preheat to 350.
Foil a cookie sheet and spray with cooking spray.
slice spam relatively thin and place in a single layer on the foil.
put a VERY thin layer of mustard on the spam.
sprinkle brown sugar on the mustard.
sprinkle crushed cornflakes on the sugar.
bake at 350 for about 20 minutes (till the spam is done - kinda makes a caramelly crust on top too).
put spam on a plate.

melt butter in micro.
place pineapple slices (chunks prolly work too) on the foiled cookie sheet.
pour butter over slices.
broil till pineapple is lightly browned, but not burned.

place pineapple on top of spam. served warm.

it was really good with stewed squash, mashed taters, corn bread and fried okra and a big glass o' sweet tea.

Thanks. I actually love spam. My problem with it is it'll stop your heart. It's a relatively quick way to commit suicide.

What exactly is spam, anyway? Do I really want to know? Seriously I have never bought any, but I know it is popular in Hawaii.

I love spam. One thing I like to do is when we go out deep sea fishin' and tie up to a rig and those perfectly timed swells start makin' everyone sick,hehehe....I go and get the spam, sit on the gunwhale and make a spam, cheese, and mayonaise sandwich. I talk all through the process so everyones' attention is on me. Then, I take a big bite out of it so that the mayonaise oozes out the sides and drips off of my chin. Next everyone on the boat starts puking and chumming up the water and bingo! The fish start biting and I start catchin' the hell out of em while everyone else is sick and crying and wanting to go back in. I love spam.

Must be a large Cajun population in Hawaii. According to Justin Wilson, they'll "eat any damn ting."

It works, try it and you will see. I have got some old photos at moms (if they survived the storm) of a fella we called "Chumbob". Snapper's will eat just about anything greasy....:smt118

I like dem freech fryed taters too, ah hahh!

It's supposed to be 100% pork shoulder meat, chopped and compressed into a canned brick. It ain't bad stuff. My lil grand likes it chopped up in her mac & cheese. I fry it like bologna and make a sammich wif mustard and a big slice of onion.

yeah, we do it in the mac n cheese too. pretty tasty!
