I almost didn't get it. The only reason I have it is because those 8-9 pieces didn't sell at my grandmother's sister's florist shop. (I was supposed to get it all, but because I wasn't in MO when grandma passed away and the aunt didn't see fit to honor grandma's wishes :smt086)

1 pound chicken
1 pound andouille sausage
1 pound boiled shrimp
12 cups shrimp-infused chicken stock (take some raw shrimp shells, heads, etc and simmer in the chicken stock for 15-20 minutes)
1 onion, chopped
1 green bell pepper, chopped
1 jalepeno, chopped with seeds
4-6 cloves garlic, minced
3, 6 oz cans tomato paste (I used the one with garlic and herbs in it)
1, 28 oz can diced tomatoes (same as above)
Cajun seasoning to taste
salt to taste
bay leaves
4 cups rice, uncooked
Brown chicken in skillet and then brown sausage
use fat from sausage to saute onion, garlic, and peppers
When onions are about translucent, add tomato paste to mixture and allow to cook. Stir frequently so it doesn't burn. Cook maybe 5-7 minutes
Add 3 cups of stock and mix well...make sure to scrape bottom of pan and get all stuff off bottom.
Add tomatoes, creole seasoning, and salt.
Cook about 10-12 minutes.
Add meat and cook another 10 minutes or so.
Add rest of stock and check seasoning. Add more now if needed.
Add rice & stir thoroughly. Cover. Let cook for 30-35 minutes or until all liquid is absorbed.
Remove lid and stir. Let cook, stirring until sauce reaches preferred consistency...about 10 minutes.

I live near Laurel and the local Sunflower burned before Christmas. Our only reputable option is Kroger and it is crazy since then. No meat left in the bins....
We went there today and bought a "free range chicken", not Sandersons but Tyson. I cooked it on the grill and it was awesome. On a side note, we bought those turnip leaves, (washed and ready to cook) Not very good at all, kind of on the tuff side.
Made some Baked taters in my rottiserie (sp???) washed em, coated with olive oil and kosher salt....really goood!

I had a small bowl of homemade mashed potatoes... nothing special.
I ate Purple Parrot yesterday for lunch so I wasn't that hungry.
Fuzzis - I printed out your recipe. My kids won't eat it, but my one of my New Years Resolutions was to cook more for ME! Thanks for sharing! (If we had "rep" I'd give you all the points I could!)
Fuzzis, that looks delicious. I like your grandmother's china. She painted that, huh? Very pretty. Yellow roses were my mom's favorite.

We are tired of everything...having a hard time of thinking of something we want...seems no matter what we cook, it seems we just had it a few days ago! I hate when we get like that..NOTHING sounds good!
