big john

Slice squash about 1/4 inch thick, slice up an onion the same, heat up a big skillet HOT, add a Tbs of bacon grease, dump squash and onion in skillet. Turn often as moisture begins to evaporate. When most of the watery liquid has evaporated, add a Tbs of butter and continue cooking and turning, allowing squash and onion to almost blacken at little. Season to taste with a little salt and black pepper. The black pepper makes it.

Enjoy. Be sure to fry some okra or green tomatoes, make a pot of field peas, and a pone of cornbread. Damit, now I'm hungry.i am fixin to try it.i dont have bacon grease so i will use sausage grease.i hope i do it right.

I'm pretty good in the kitchen myself but since I'm from Miss and I didn't grow up eating cioppino, I've never tried to make it. I see it being made on Food Network all of the time, but it looks kind of expensive to make with all of that fish. Bobby Flay made one last weekend on Boy Meets Grill and while it looked good he put about 7 types of fish in his. What all did you put in yours? I'm surprised you don't see it more around here since we are close to the Coast. According to Bobby, the dish originated in San Fran. I love him. I made his grilled pizza not too long ago and it was really good.

It was a little expensive. About $35 for all the fish, but it fed four people tonight and there's enough leftover for another 6-8 folks so not bad when you do a per serving cost. I used grouper, shrimp, crab, and scallops. The recipe I use calls for mussels and calamari as well, but I couldn't find it. I used stewed tomatoes with garlic, basil, and oregano, as well as jalapeno peppers and lots of garlic. So very good.

I did have a drink for you. Maybe two. :-D

According to CB in the post about testosterone:

I've seen studies linking diet to estrogen levels. Diets high in milk protien and animal protien raise estrogen levels, thus women start menstration at an earlier age, etc... could be cause for lack of testosterone, too...

Spaghetti.
I make my sauce with cut up roast or steak instead of ground beef.
Big chunks of vegetables, & I have the head of an old ball pean hammer in the kitchen drawer to mash whole cloves of garlic.
For garlic bread I pour olive oil in a plate, dip one side of each piece of bread in the oil, then smear roasted garlic over the oil, sprinkle on basil, paprika & parmesian cheese & toast in the oven.
Sometimes I just make the garlic bread alone.

I've only tried the beef during steer season and they were good. The true "Mountain Oyster" is goat, and i've never tasted much goat I liked. The only good BBQ goat I had was at a 4th July BBQ and the guys who prepared it really knew their stuff. The killed the young kids by cutting throats while hanging by their heels. Then quartered goat and marinated of 24 hours before going on pit. It was really good.

The Sner and I used to go to the Rocky Mountain Oyster sheep festival in Virginia City, NV every year. You paid something like $5.00, and they gave you tickets that you used to go around and taste the various offerings. We liked the ones that were pounded flat, dredged in bread crumbs and parmesan and then fried. The RMO pate was pretty gross, as was the chili made with RMO. The RMO wontons were pretty good. :smt102

I grilled chicken. I brined the chicken for 30 minutes in salt and sugar to help lock the juices in the chicken. I then added a rub that I got from New Mexico. I slapped on a little Ole Ray's Apple/Cinnamon bbq sauce which won 2nd place in the NBBQA championship this year. I had that with some fruit and brown rice.

As CB related, I think the secret to good fowl is in the brining process.
Makes for a good crusty skin, which to me, is the best part.
You are so right about the crispy skin IMO all fowl should be cooked through with a nice crispy skin. I hate it when you go to a restaurant & the serve you duck that's raw in the middle.

Tacos... and my own homemade Mexican Kitchen sauce. Tastes just like the real thing if I do say so myself... actually even a little spicier!! It'll burn your taste buds off- just like I like it!
