View Full Version : What did Ya'll Have for Supper?
Tonight I made some chicken chimichangas with refried beans on the side and a salad with tomatoes. And yes, it was delicious. Would have been better if the tomatoes had been fresh from the garden.
I hope I don't have a bunch of gals hitting on me...I'm 100% female! :smt061 I normally cook for 6-12 but that's all fixing to change. Three of my boys are heading back to school in three weeks. Then I'll only be cooking for two during the week and three on weekends. Gonna have to dig out the small frying pan again.
My work background? In Hattiesburg, I worked for the telephone company but had to resign when my husband was transferred out of state. I've worked off and on since then when boredom sets in.
Next summer I have a HHS 30-year class reunion to attend...I'll have to stop in at your restaurant and see if your steaks are really as good as I've heard!
That's okay, Hawkeye. I've assumed once or twice in my life. I won't wait til next summer for a steak, but to have one of yours, I have to. If I left right now, I wouldn't get there until after breakfast...I live in Illinois.

So...does that mean when I get back down there I get a "Southerner stuck in Yankee-land returning home for a visit" discount? :-D

I've never even heard of Davisburg. What part of the state is it in? Couldn't find it on the map. I'm in the south-east-central part of the state, not too far from where I57 and I70 intersect.
You probably think I'm just blowing smoke, but I'll surprise you when we come down next summer!

I had blackened redfish topped with shrimp, crawfish, mushrooms & a creole butter sauce with augratin potatoes. Makes my mouth water just talking about it. hahaha!

Hawk, actually it was leftovers from Crescent City Grill from the night before. My hubby did however do some grilling last night (burgers & chicken.) I'll get to enjoy that tonight. :-D

chicken nuggets from McD's... not the best. but had La Fiesta for lunch.
Had a late lunch so I wasn't really hungry come suppertime. Just had a fried egg sandwich. Hit the spot.
Ribeyes on the grill, sweet potatoes, brussell sprouts.........mmmmmmmmmm good.

For breakfast, young fried squirrel, gravy and homemade biscuits. MMMMM-MMMMMM, it soooo good.
I hear tales that when I was a much younger fuzz, there were things like squirrel on the menu all the time, but the closest I've come to such in the last 25 years of my life (give or take a few years) are the chukars fajitas at a friend's annual superbowl party.
My uncle keeps trying to get me to come visit him in Dallas, luring me with promises of sending me home with a cooler full of venison and wild hog, but as I can't remember the last time I had those things, it's about as tempting as spending a weekend with the evil woman he married and the demon they spawned. :help2: (Which is a shame because I really do like my uncle)

The Reverand ate so much supper, and it was hard for me to quit.
A plate full of homemade biscuits, with maple syrup rolling off the top
My pants button is on red alert, and I think its gonna pop.
Maybe Noway, Tully and Hubbarister, can come over for a friendly debate
While the wife cuts three slices, of her famous chocolate cake.
Lets not forget the ladies, Lylabean, Justme and Southern Belle, you are invited too.
We could finish off our meal, while the coffee starts to brew.

I was gonna roast a chicken and make some pesto angel-hair pasta, but decided that's going to have to wait until tomorrow as the chicken wasn't fully thawed. I opted for a grilled cheese sandwich instead.

My neurologist put me on a migraine diet for two weeks - no cokes, chocolate, peanuts/peanut butter, raisins, lucheon meat, sausage, bacon, lima beans, yellow cheese, etc., etc., etc.
there goes all the good food, so what's left to eat for supper! lol

As soon as it heats up, I'll be enjoying some roasted beast along with potatos, carrots, onions, and mushrooms.
I need to go to the store for ice cream and chocolate syrup for the brownies that they gave me at lunch since they bussed my table while I was in the bathroom and tossed most of my meal and a damn near full beer. :smt093 I'm not sure the brownies will make up for the beer.

Yup, tried it... once.
I don't like hairy shrimp.
And I don't like coconut, either. :smt001
But I do love shrimp! You don't have to do much to a shrimp for it to be good, but there are lots of ways to mess them up.
Just like a good steak. You can pour all kinds of glop over them and really mess them up, but the best steak is one that's a good cut of meat cooked right, with little or no extra stuff added to it.
I guess I'm just a no-frills, plain kind of guy.

so i tried a new way of making roast. i usually throw it in a crock pot with a package of Lipton's French Onion soup mix and let it cook for about 10 - 12 hours. someone told me about putting half a can of coke and beef broth with the potatoes, carrots, and onions. so i tried that tonight. i didn't like it too much. not a fan of the potatoes and onions and the meat seemed a little dry. anyone know of any other ways to make roast a little more tasty?
For an easy beef stew, grease a Dutch oven, throw 2 pounds of beef stew meat in the bottom (not browned), a can of mushrooms (drained) on top of that, then potatoes cut into chunks, no need to peel, (I use new potatoes cut in half), carrots, 1 onion chopped into large chunks, sprinkle with garlic powder and pepper, top with an envelope of dry onion soup mix. In a separate container, mix 2 cans of cream soup (I use cr. of celery and mushroom) with either 1 can water or 1/2 can water and 1/2 can red wine, throw in a little parsley, stir, pour on top of meat and veggies, cover and bake at 275° for 5 hours. No peeking. Very delicious, very easy. The meat will be so tender it falls apart.
I had chili leftover from Saturday so we had chili pie tonight. Hit the spot with the cooler weather.

Next time you have 10 tons of leftover roast, make some BBQ out of it. Cooking for one is hard. I went from cooking for 6 to 2; daughter and I end up eating out more than we should.

It was a small roast to begin with, and I liked the mushroom sauce I made for it. I just despise left-overs.
I forget that though. Kind of like I forget I don't like green grapes. I have to try it now and again to be reminded. *sigh*

Tonight we had a program dealing with "a taste of the nations". There were so many different things there from countries around the world. We had noodles from South Korea, sour cream coffee cake from Canada, a mexican dip with lime chips, potato cakes from Ireland, mango ice cream from Kenya, and a punch from Australia. It was very different and was a great experience. And best of all we got to make all of it and then eat it! It was so fun!

I tossed a rib-eye and a potato on the grill. I forget sometimes how good real butter and sour cream are. *sigh*
I also opened the Vampire Pinot Noir. Highly disappointed, although since 'tis the season, I guess I can suffer.
